The Francis the 1st Post

I am not quite ready to write it I guess.

And here's what I am eating

It's really not that bad so far - not eating wheat products. I miss cookies quite a bit. I ordered those damn Thin Mints before I got diagnosed and then they arrived and I sat around watching my family tell me that they were really horrible this year and I wasn't missing out on anything .



Liars.



I am working out a Teff, Buckwheat and Oatmeal cookie that will probably be only wonderful to me. I will report back when I perfect that.





But for now - Here is what we have been eating.

I am not really a photographer, but I think those green beans look pretty tasty.

The children don't run away screaming like banshees when they see beets on their plate, but I am forced to roast them separately. God don't these look gorgeous?

Those marinating chicken thighs don't look too appetizing right there, but I assure you that they were devoured by my carnivores. I should have taken a photo of the finished product.
